Here's what I used:
- 5-6 blueberry muffins, cut up and left to dry out overnight
- 1 egg
- 1 tablespoon butter spread, melted
- 3/4 cup unsweetened vanilla almondmilk
- 2-3 tablespoons brown sugar
- 1/4 teaspoon vanilla extract
Place the muffin pieces in a small cake pan or pie tin. Beat all the liquid ingredients together, pour over the muffins to soak, and then place in a 350 degree F oven for about 20 minutes.
