Renegade Blueberry Muffin Pudding

Breakfast today was my first attempt at making bread pudding without a recipe. Because we were such rebels at Souplantation last night, we stole about 5 or 6 of their AMAZING blueberry muffins. Hey, it was 10:45 p.m. and what were they going to do with them? Throw them out? Exactly. You're welcome, Souplantation. We clearly did you a favor.

Here's what I used:

  • 5-6 blueberry muffins, cut up and left to dry out overnight
  • 1 egg
  • 1 tablespoon butter spread, melted
  • 3/4 cup unsweetened vanilla almondmilk
  • 2-3 tablespoons brown sugar
  • 1/4 teaspoon vanilla extract

Place the muffin pieces in a small cake pan or pie tin. Beat all the liquid ingredients together, pour over the muffins to soak, and then place in a 350 degree F oven for about 20 minutes.
BAM.


We cleaned the pan.
