No idea why, but this was good.

For dinner, I made sweet potato patties, which I coated in cornmeal (gluten free lyfe!), crunchy garbanzo beans that I roasted with with chili powder & cumin, and jicama fries with lemon & Lawry's--the ONLY way to do jicama! On top of my patties, I put some of the eggplant, garlic, roasted pepper, tomato spread I made last night. Yom :)
